capers, drained and roughly chopped
Small handful parsley, finely chopped
Make and chill the herby butter up to 3 days ahead. Prepare and chill scallops and wash shells up to 2hr ahead. Complete recipe to serve.
If you prefer, buy 18 large scallops and grill them in shallow ramekins rather than their shells.
